I can't figure out from the documentation how to create a document style that would hide the headers and footers. When I did try it, that option in the palette was grayed out.

I'm sorry you experience difficulties with Nisus Writer Pro.
To accomplish what you want you need to create a template file that has the headers and/or footers hidden. Open a new file, set everything the way you want (that is turn on – check – Hidden Footers and Hidden Headers in the Header/Footer palette) and then save the file as a "Document Template" format ".DOT" file in the pop-up menu menu at the bottom of the Save As dialog. I'd name the file something like "No Header/Footer Template".
That should do the trick.
