converting multi-language characters into quark, for publish

Hallo,
I am typing into Nisus in Italian with the occasional Slovenian, German, French character. Here's a sample: ? ? š ž ? ? ? Š ? ? ? Ž ü ä ö ß ç á.
I've tried saving the files in Word, HTML, and otherways, but Word still cannot read them. I'm afraid the publisher, probably using Quark Express, won't be able to visualize the characters either. How can I convert them? Any suggestions?
