I love having lists! But, the spacing between the number and the text is too large. I hope that is an editable feature, but I haven't found a way of changing it so far.
How can that spacing be changed?

I'm glad you like our lists and the spacing is absolutely customizable. You have two ways to do it. The first is better when you want to set up all the indents for all the levels of your list style. Here's how:
1. Switch to the stylesheet view.
2. Click the list style you want to edit in the list of styles (on the left).
3. Now, on the right hand side select one (or more) list levels.
4. You can now use the Lists palette to make any adjustments you need.
5. To change the spacing use the field labelled "Item" and "Text".
There's lots of other options that let you customize your list styles there as well.
You can also make adjustments to one list level at a time without switching to the stylesheet. When you're in the document, editing a paragraph with a list style applied, just use the Lists palette. Any changes you make will only apply to the current list level.
One final tip: if you want to change the spacing for a particular paragraph in isolation just use the indent markers on the rulers. These changes will not affect any other paragraphs.
