is there a way to lose the default tooldrawer sets (writing/formatting/tables/document)? not a big deal, just seems a bit odd to keep the custom set that i'm actually using hidden behind ones that i don't.

I bet there isn't, but don't overlook the fact that you can customize the four "visible" palette groups. Could that be of help?

As far as I know there isn't, which is perhaps the one change in 2.5 that I consider a step backward. I really did prefer to name and order my own tooldrawers, but a previous discussion on this board seemed to indicate that those of us who want this ability are in something of a minority.

It's kind of like the buttons on a Palm handheld. You can't change the icons, but you sure can change what they do. I've customized the palette groups, and the icons make sense for my purposes.
However, I agree that further customization would be nice. I also think that everyone can be satisfied here. Leave the icons, but then make them editable or swappable or re-orderable in the preferences. One idea.
