I have found using Powerfind Pro better when trying to do attribute replacement. Perhaps worth a try; if you just switch your S&R to Powerfind Pro, you shouldn't have to retype your strings.

Hold down the option key, click on the "Go To" menu, and you'll find "Library" has appeared on the menu, choose that and the library will open. Navigate to "Preferences" and you'll find it there.

I remove unwanted styles by going to Stylesheet view, highlighting the ones I want to remove—.doc(x) files imported from Word are littered with huge numbers of unused and weird styles—and tapping the <delete> key. Yes, the red AJenson means another font is being substituted. That's weird, because Adobe Jenson Pro includes soft-hyphens among its glyphs, so why is a substitute being called for? I have no idea.
